The Location

• Sydney Opera House is one of the architectural wonders of the world, designed by Jorn Utzon, perhaps the best known building of the 20th century.
  
• In 2001, the NSW Government provided $69.3 million to improve the facilities and environment for performing arts companies, patrons and visitors.
  
• Jorn Utzon is the Director in Charge, Master Architect and Concept Designer for these projects.
  
• The first new venue at Sydney Opera House designed by Jorn Utzon was opened in September 2002 and renamed the Utzon Room.
  
• Utzon has designed a stunning new interior for the former Reception Hall with his signature features of natural timbers and finishes and a 14 metre brightly colour tapestry.
  

Challenges

• To provide five star function service and delivery to this new venue. There were no existing facilities capable of supporting this style or standard of service.

What FCA was asked to do

• Create an operational strategy and design brief that considered the changing use of the space for performances and functions, accommodated the existing Back of House conditions, the budget and current contractual catering constraints.
  

What FCA did

• Prepared a Catering Strategy and Design Brief, based on a system of food outsourcing and on site assembly and rethermalisation.
  
• Worked with project team to test and refine.
  
• Provided rationale for installation of lift for service delivery from Back of House to Front of House.
  
• Identified highly flexible catering and service system, which was successfully able to operate in the location and within the constraints of the performance and function space.
